Description

• Cooking Direction : Step 1 . Cover the mushrooms in boiling water. Cover with plastic wrap to stop heat escaping. Soak for 20 minutes.
• Step 2. The mushrooms should almost double in size. Drain. Strain the liquid and use in stocks and soups.
• 3. Discard the stems theyre too tough to eat. Slice the mushrooms and add to stir-fries, soups and curries.
• Shiitake mushroom are workhorses in many Asian kitchens.
• Dried mushrooms should be stored in a cool dry place, in a Tupperware or glass container. Since our house tends to be very humid, we store ours in the fridge.

Shiitake mushrooms are such a foundation of Asian cooking. They have an intense flavor that always reminds me of my Chinese grandmothers cooking, where she used shiitake mushrooms in soups, braises, and steamed dishes. My grandmother always had a big glass jar of dried shiitake mushrooms in her pantry, and Ive picked up this habit too!
